This family snack is a traditional Ghanaian recipe from the Fante people. It is easy to prepare and chewy yummy.
1. 1 matured coconut fruit aka Kube dwe
2. ½ cup sugar
3. ¼ cup/ 60ml water
4. 1 teaspoon lemon juice
1. Crack coconut fruit, remove the hard bark and grate into desired size. Spread grated coconut on a towel to dry slightly
2. Put sugar in a heavy bottom pot, add water and lemon juice and stir together. Put on medium heat till it turns golden brown. Reduce heat to low and stir in the grated coconut. Continuously stir till coconut turns slightly shade of brown
3. Remove from heat, put saucepan into water to cool coconut and to stop the cooking process. Dip tablespoon in cold water, scoop coconut onto a stray or plate. Continue until all the candy is scooped into balls. Leave to cool down and store in airtight container.
